萝卜核桃蛋糕【Carrot Walnut Cake with Cream Cheese】
有一段时日没有烘蛋糕了
也很久没有好好的研究新食物
想做这个蛋糕有一段时日
萝卜买了又买,等不及给我做蛋糕就拿去做菜了
Walnut也买了好一段时间
由于,想在离别前做一次蛋糕给同事
加上,刚好要visit阿达朋友的家
加上,Oven就要不在身边了
再加上,要趁GST前买一次cream cheese,做一次蛋糕
就下定决心,选了一个日子!做蛋糕!

由于奶酪芝士我等要吃的时候才铺上去,
所以照片没有拍到有cream cheese的carrot cake.

蛋糕材料:
核桃(半盒忘了多少克)
面粉150克、发粉1tsp、苏打粉1/4 tsp、肉桂粉1/2 tsp、盐1/4 tsp
鸡蛋2粒、糖80克、粟米油150ml、
萝卜1小条(刨丝)
蛋糕做法:

1.预热烤箱160℃后,把核桃烤香,约8分钟。
2.核桃待凉后,拍碎。
3.烤盘铺上油纸,预热烤箱,过筛所有粉类,加盐。
4. 将鸡蛋和糖打至乳白色。
5.加入油,萝卜丝和核桃混合均匀。
6.把筛好的粉类用刮刀顺时拌入混合料里。
7.拌至所有粉料湿润后,放入预热好175℃的烤箱,烤35-40分钟。

铺面材料:
牛油50克、奶酪芝士50克、糖粉50克、
柠檬(1/2-1粒柠檬屑+1汤匙柠檬汁)
铺面做法:
1.牛油和奶酪芝士切小块放置在室温下。
2.打发牛油和奶酪芝士,慢慢加入糖粉和柠檬汁。
3.把柠檬屑和少许的萝卜丝混入打发好的奶酪芝士即可完成。
4.然后,涂在冷却后的蛋糕上,放进冰箱,过后就可以享用啦!

150g flour, 1tsp baking powder, 1/4tsp baking soda,
1/2 tsp cinnamon, 1/4 tsp salt
2 eggs, 80g sugar, 150ml corn oil
1/2-1 carrot (finely shredded)
Method for the cake:
1. Preheat oven for 160℃, toasted walnut for 8 minutes.

2.Let the walnut cool down and chopped.
3. Preheat oven 175℃ and sifted all the flour, add in salt to the flour.
4.Whisk eggs and sugar.
5. Add in oil, shredded carrot and chopped walnut, mix well.
6.Fold in the flour to the mixture.
7.Put the mixture to the mould and baked for 35-45 minutes.

Frosting Ingredients:
50g butter, 50g cream cheese, 50g icing sugar,
lemon (lemon zest + 1tbsp lemon juice)
Frosting Method:
1.Put the butter and cream cheese under room temperature.
2. Slice butter and cream cheese to small piece and whisk together.
3. Slowly add in icing sugar, whisk until creamy.
4. Lastly, add in a little bit shredded carrot, lemon zest and lemon juice, mix well.

5.Spread them on top of the cake, chill it before serve.
