苦瓜焖鸡【Braised Chicken with Bitter Gourd】

材料:
全鸡腿肉1只(切块)、中型苦瓜1条(切片)、
萝卜半条(切片)、蒜米2瓣(切碎)、姜一小块(切片)

调味料:
A:盐少许、酱油少许、豆瓣酱半汤匙
B:黑酱油半汤匙、蚝油半汤匙、绍兴酒1汤匙、糖少许

做法:
1.鸡腿肉切块后,先用酱油和盐腌个20分钟。
2.苦瓜切片后,稍微用盐抹抹,冲洗,减少苦瓜的苦味。
3.热油稍微拌炒苦瓜2-3分钟后,取出备用。
4.继续下鸡肉块拌炒3-5分钟后,取出备用。
5.另热锅,下油爆香姜片,蒜米和豆瓣酱,
然后加入刚刚稍微炒过的鸡肉块和苦瓜。
6.继续放入萝卜后,加入适量的水和调味料B拌匀。
7.大火煮5分钟至水滚后,小火继续焖煮15-20分钟,即可上桌。

Ingredients:
1 whole chicken leg (cut to pieces),
1 medium Bitter Gourd (cut to sliced),
1/2 carrot (cut to sliced),
 2 nos garlic (chopped), 1 small ginger (sliced to 10pcs)

Seasonings:
A: sufficient salt and light soy sauce for marinate chicken,
 1/2 tbsp yellow bean sauce
B:1/2 tbsp Dark Soy Sauce, 1/2 tbsp oyster sauce,
1tbsp Shao Xin Wine, sugar to taste

Method:
1. Marinate chicken with salt and light soy sauce for at least 20 minutes.
2. Rub sliced bitter gourd with sufficient salt.
3. Heat oil, stir fry bitter gourd 2-3 minutes, set aside.
4. Using remaining oil continue stir fry chicken 3-5 minutes
until chicken half cook, and set aside.
5.In another wok, heat oil, saute garlic, ginger and yellow bean sauce,
then add in chicken and bitter gourd.
6.Mix well then continue add in carrot, sufficient water and seasoning B.
7. High heat, bring the water to boil around 5 minutes
and continue braised them in low heat for 15-20 minutes.

本身不太爱吃苦瓜,
平时除了买山苦瓜来炒蛋之外,
几乎不怎么买大苦瓜。

由于家里的鸡肉块躺在冰箱有一段时日,
暂时不想煮常煮的木耳鸡或马铃薯焖鸡,
就想试试煮下苦瓜焖鸡,
结果出来的味道一级棒!
苦瓜真的不会太苦
加上有放萝卜的关系,
菜汁较甜,配饭吃真的会忍不住一直加饭。
